This is a staple in our weeknight rotation. Not only because its quick and easy to make, but it's so delicious, and equally as nourishing. Broccoli is a nutrient powerhouse, rich in vitamins C and K, folate, potassium, manganese, iron, and more. It also contains a variety of plant compounds, like sulforaphane and indole-3-carbinol which may protect against cancer, and an antioxidant that fights inflammation and may protect against things like heart disease, and allergies.
A note on choosing ingredients: Opt for grass-fed or pasture raised beef when possible.

Weeknight Beef & Broccoli
Servings: 4 Prep time: 30 mins
ingredients: Meat & Marinade
1 lb beef (flank or skirt steak)
1/4 c avocado oil
1/4 c tamari
6 cloves garlic, minced
1 tsp ground ginger
1 Tbsp almond butter
1 Tbsp rice vinegar
1 medium onion, sliced
Veggies
1 Tbsp avocado oil
2 Tbsp tamari
1 bell pepper, cut into strips
4 c broccoli florets
1/2 c scallions (optional)
directions:
Preheat the oven to 425°F, place a baking sheet in the center of the oven to preheat.
Prep marinade: mix ¼ cup avocado oil, ¼ cup tamari, garlic, ginger, almond butter, vinegar, and onion.
Slice meat 1/4" thick and add to marinade.
Prep veggies: Combine bell peppers, broccoli, 2 Tbsp tamari, and 1 Tbsp avocado oil. Toss to coat.
Cook: Spread the beef and veggies evenly on the preheated baking sheet, and drizzle any leftover marinade on top. Cook for 10 minutes.
Broil for additional 2-5 minutes for extra browning.
Garnish with scallions (optional).
